Inside Chyna Club: Cantonese Luxury at Fontainebleau Las Vegas

Located inside Fontainebleau Las Vegas, Chyna Club delivers a polished, high-end dining environment where moody sophistication meets night-out energy. An elevated Cantonese fine-dining concept crafted by Alan Yau, founder of Hakkasan, the restaurant stands out for its immersive aesthetic, atmospheric lighting, opulent interior styling, and an equally impressive menu.

Unlike a lot of restaurants in Las Vegas, Chyna Club is a sultry, lavish atmosphere designed to feel like you are stepping into an exclusive private salon rather than a sprawling venue. Despite seating over 140 guests, the space is divided into smaller, interconnected dining chambers that give a speakeasy, secret vibe perfect for date night.

This segmented layout creates a cozy, highly exclusive setting that avoids the noise and exposure of typical Las Vegas dining rooms. Dark, moody tones set the scene, accented by glowing gold finishes, plush velvet drapery, and rich wood tones. Custom bookcase walls and mixed fabric elements add depth and texture.  The aesthetic balances opulent club-style lounge elements with classic residence decor. Soft, focused illumination keeps table conversations private while highlighting the high-end design. A dramatic skylight above the main dining room creates the illusion of an ever-changing sky, with illuminated clouds slowly drifting overhead.

Cantonese Cuisine, Reimagined for a Luxury Night Out

While many fine-dining restaurants on the Strip focus on small, delicate plates, Chyna Club balances luxury ingredients with surprisingly generous portion sizes designed for shared dining.

The menu reinvents traditional Cantonese cuisine through a mix of global luxury ingredients, classic techniques, and French-inspired execution. Under executive leadership, traditional sauces and slow-cooking styles are executed with modern flair, creating delightful dishes that feel both familiar and distinctively elevated.  Classic French techniques appear subtly in glazes and sauces, such as substituting standard black vinegar with aged ginger-balsamic or using French-style reductions for seafood and meat glazes.

One of the focal points of the menu is the duck program, a signature experience for those in the know. Several tables around us opted for the tableside-carved Peking duck, where whole ducks are presented and expertly carved tableside, then served with warm, freshly made pancakes and traditional accompaniments. For an even more immersive experience, the Peking Duck Tasting Menu transforms the restaurant’s signature bird into a multi-course journey, showcasing different cuts and preparations across several dishes.

All of the appetizers sounded amazing, so we ordered the Chyna Club Sampler – a journey through some of the favorites, as well as an off-menu item. The sampler brings together four distinct, highly flavorful bites on a single platter, including the Peking Duck Salad, Iberico Barbeque Ribs, Miso Cod Lettuce Wrap, and Wagyu Pot Stickers (not available à la carte). While each item was delicious, the standout for us was the Miso Cod Lettuce Wrap – large filets of tender, juicy cod in a crisp butter lettuce wrap. The glaze on the filet had us wanting more!

Other standout dishes included Bluefin Tuna Sashimi with daikon and jellyfish salad, truffle oil, bonito, and ponzu sauce. The generous portions of pristine bluefin were elevated by an unexpected whisper of truffle, adding an earthy richness to the bright, delicate dish.

The Duck Wonton Consommé with kombucha squash and zucchini was light and refreshing, despite its rich protein base. Throughout the menu, there is no shortage of substantial options, so you certainly won’t leave hungry. Even the Sichuan Green Beans arrive with minced Wagyu beef, turning what might otherwise be a side dish into something far more indulgent.

Wagyu makes several appearances throughout the menu, including the Spicy Mongolian American Wagyu Beef with asparagus, winter bamboo, shiitake mushrooms, and shishito peppers – another standout for anyone looking for something bold and satisfying.

The beverage program at Chyna Club is designed to complement the rich, complex flavors of Cantonese dishes while standing out as a destination for cocktail enthusiasts. The atmospheric charm of the restaurant extends directly to the bar service, enhancing the overall high-end night-out experience. Drinks feature artisanal ice blocks and Asian-inspired accents, matching the venue’s overall mood. The cocktail lineup features inventive, Asian-influenced twists on traditional classics. Highlights on the menu include savory and spice-forward signature options, such as the Bloody Chyna, alongside craft drinks that integrate ingredients like green tea, lychee, and aromatic spices.

Ultimately, Chyna Club inside Fontainebleau Las Vegas doesn’t just serve fine-dining Cantonese cuisine; it wraps you in an atmosphere of moody, old-world elegance. With its rich jewel tones, French Art Deco accents, and cozy drawing-room layout, it feels like a private, secret supper club from a bygone era.
