Frozen Greek Yogurt IN THE CUP- tasty with no dishes! Photo by Christianne Klein

After a cold led to a bout of antibiotics, I started looking for unique ways to rebuild my immune system.  You may have seen the olive oil-drizzled ice cream that’s gone viral on TikTok and other social media.  I do love that savory and sweet treat, but I started thinking, could I do the same thing with Greek yogurt?

Oh yes, I can, and I did.

Picture this: a 5-ounce cup of velvety Greek vanilla yogurt, transformed into a frozen treat, adorned with the richness of olive oil, and crowned with the delicate crunch of Maldon salt. It’s a journey of flavors (WITH health benefits) that will elevate your culinary experience to new heights.

What makes this so unique and different:  freezing makes the yogurt taste slightly less sweet and brings out the tang of the yogurt.  That was perfect for me, but those who love a sweeter taste (probably most people) will want to mix in a little honey during the freezing process.

I have an insane amount of finishing salts: both regular and smoked Maldon flaky salt, as well as fennel, lemon, rosemary, chili, and many many more.  I used vanilla bean yogurt here, but this would be great with strawberry Greek yogurt, a drizzle of olive oil, lemon salt, fresh berries (and balsamic glaze if you have it).

The best part- I made this IN the 5-ounce cup so... No waste and no dishes!

The Greek Yogurt Marvel:

Begin this taste adventure with Greek yogurt, a nutritional powerhouse revered for its exceptional health benefits. Bursting with probiotics, Greek yogurt is a gut-friendly delight that promotes a healthy digestive system. Its high protein content contributes to a feeling of fullness, making it an excellent choice for those mindful of their calorie intake.

Olive Oil Elegance:

Olive oil is known as liquid gold, and for good reason. Beyond its culinary allure, olive oil is laden with heart-healthy monounsaturated fats, boasting anti-inflammatory properties. It's a cornerstone of the revered Mediterranean diet, known for promoting cardiovascular health and overall well-being.

Frozen Greek Yogurt with Olive Oil and Maldon Salt

Ingredients:

  • 5 ounces of Greek vanilla yogurt

  • Extra virgin olive oil

  • Honey (optional)

  • Maldon salt flakes

Instructions:

Place a 5-ounce, unopened cup of Greek vanilla yogurt into the freezer.  Set a timer for 35 minutes.  Greek yogurt will be soft with some frozen parts at this stage.

Peel the lid off the semi-frozen Greek yogurt and stir to combine (if using honey, drizzle into yogurt cup before stirring).  Place back in the freezer for 10-15 minutes until desired consistency.

Once frozen, remove from the freezer and drizzle a generous amount of extra virgin olive oil over the yogurt.

Sprinkle Maldon salt flakes delicately over the olive oil.

Allow the frozen yogurt to slightly thaw for a minute before serving.

The Harmonious Blend of Flavors:

As you take your first bite, the creamy texture of the frozen Greek yogurt marries seamlessly with the fruity notes of the olive oil, while the Maldon salt imparts a delightful crunch. Each spoonful is a sensory journey, a dance of contrasts that leaves your palate longing for more.

Health Meets Indulgence:

Indulging in this frozen delight isn't just a treat for your taste buds; it's a celebration of health. The probiotics in Greek yogurt support your gut, the monounsaturated fats in olive oil promote heart health, and the Maldon salt, sourced from the pristine waters of Essex, adds a touch of mineral-rich elegance. It's a guilt-free treat with a unique artistry of flavors and the synergy of nutritional benefits.
