1. Maple Roasted Brussels Sprouts with Pomegranate Seeds

Roasting Brussels sprouts brings out their natural sweetness, and adding maple syrup and pomegranate seeds provides a festive look and tangy flavor.


Recipe:

  • Ingredients: 1 lb Brussels sprouts (halved), 2 tbsp olive oil, 1 tbsp maple syrup, salt and pepper to taste, ½ cup pomegranate seeds.

  • Instructions: Preheat oven to 400°F. Toss Brussels sprouts in olive oil, maple syrup, salt, and pepper. Roast on a baking sheet for 25-30 minutes, stirring halfway. Once roasted, sprinkle with pomegranate seeds and serve.


2. Sweet Potato and Sage Cornbread

This cornbread has a twist: sweet potatoes and sage. The earthy flavors add warmth to the table and pair wonderfully with both turkey and cranberry sauce.


Recipe:

  • Ingredients: 1 cup mashed sweet potato, 1 cup cornmeal, 1 cup flour, 1 tbsp baking powder, 1 tsp salt, ½ cup sugar, 1 tbsp chopped fresh sage, 1 cup milk, 2 eggs, ¼ cup melted butter.

  • Instructions: Preheat oven to 375°F and grease an 8x8-inch pan. Mix dry ingredients, then add wet ingredients, stirring until combined. Pour into the pan and bake for 25-30 minutes or until golden.


3. Roasted Beet and Goat Cheese Salad with Walnuts

This colorful salad is a great option for balancing heavier dishes. The earthy beets, creamy goat cheese, and crunchy walnuts offer a nice contrast to traditional Thanksgiving flavors.


Recipe:

  • Ingredients: 4 medium beets (peeled and diced), 2 tbsp olive oil, salt and pepper, 4 oz goat cheese (crumbled), ¼ cup walnuts, arugula or mixed greens, balsamic vinaigrette.

  • Instructions: Preheat oven to 400°F. Toss beets with olive oil, salt, and pepper, then roast for 35-40 minutes until tender. Toss greens with balsamic vinaigrette, top with roasted beets, goat cheese, and walnuts.


4. Cauliflower Gratin with Gruyère and Thyme

This cheesy, creamy gratin is a delicious alternative to mashed potatoes. The Gruyère adds a nutty flavor that pairs beautifully with the thyme and cauliflower.


Recipe:

  • Ingredients: 1 head of cauliflower (cut into florets), 1 cup heavy cream, 1 cup shredded Gruyère cheese, 1 tbsp fresh thyme, salt and pepper.

  • Instructions: Preheat oven to 375°F. Arrange cauliflower in a baking dish. Pour heavy cream over cauliflower, then top with Gruyère, thyme, salt, and pepper. Bake for 25-30 minutes until bubbly and golden.


5. Cranberry Apple Chutney with Ginger and Orange Zest

This chutney is a bold twist on traditional cranberry sauce, with apples, ginger, and orange zest adding layers of flavor.


Recipe:

  • Ingredients: 1 cup fresh cranberries, 1 apple (peeled and chopped), 1 tbsp grated ginger, zest of 1 orange, ½ cup orange juice, ½ cup sugar.

  • Instructions: In a saucepan, combine cranberries, apple, ginger, orange zest, orange juice, and sugar. Bring to a boil, then reduce heat and simmer for 15-20 minutes until thickened. Let cool before serving.
